French Leek and Potato Soup

Sample the beauty of French cuisine with this elegant soup.

Serves 10

5 count - Leeks
3 Tbsp - Butter
10 cups - Chicken Stock
5 count - Russet Potatoes, peeled and diced
2 count - Bay Leaves
1 tsp - White Pepper
1 cup - Cream
½ lbs - Bacon, chopped and fried crisp
¼ cup - Parsley, chopped

Split the leeks in half and then slice the white portions into very thin half circles.  Put in a bowl with water and break them apart.  Drain the water off and rinse the leeks.  Melt the butter in a large pot.  Add the rinsed and cleaned leeks.  Simmer on low heat for about 10 minutes.  You want to make sure that neither the leeks nor the butter brown.  Add the chicken stock, potatoes, bay leaves and pepper and let it simmer for about 45 minutes.  The potatoes should be very soft.  Remove and discard the bay leaves and puree.  Return it to the stove and heat it back up.  Whisk in the cream and serve with the crisp fried bacon bits and parsley sprinkled on top.
