Foodie Fridays: Ruisleipä

Welcome back to another Foodie Friday! This week's recipe is is Ruisleipä - Finnish Rye Bread.
1/2 cup milk (room temperature)
1/2 cup rye flour
Around 2 days before you plan to make your rye bread, create this starter. Combine the milk with the flour and let it sit uncovered until it begins to bubble. Complete the first and second steps of the below directions.
Rye Bread ingredients:
1/2 cup Starter (see above)
2 cups warm water
3 1/2 cups rye flour
1 package active, dry yeast
1/4 cup warm water
2 teaspoons salt
3 cups white flour
Transfer the starter into a large mixing bowl and stir in 2 cups of water. Blend in 1 cup of rye flour.
Cover and let stand for 1-2 days (depending on how sour you want your bread to be).
In a separate bowl, dissolve yeast in 1/4 cup warm water then transfer into dough mixture.
Add salt and gradually stir in remaining rye flour. Repeat with white flour.
Once dough is formed, let sit for 10-15 minutes and then turn out onto floured surface and knead until smooth.
Place dough in lightly greased bowl and let rise until dough is doubled.
Divide dough into 2 parts and shape each into a ball.
Place each ball on a lightly greased baking sheet and poke with fork.
Cover and let rise fin a warm place for around 30 minute- or until puffy and smooth.
Bake at 375 for 45 minutes or until lightly browned.
