Foodie Fridays: Kääretorttu

Happy Foodie Friday! This week's treat is a jelly roll perfect for coffee or dessert!


3 eggs 

1/2 cup sugar

3/4 cup sifted white flower

1/2 teaspoon baking powder

Dash of salt


1 teaspoon vanilla

1 cup fruit or berry jam

1 cup cream (optional)

Confectioners' sugar



Beat the eggs until smooth and add 1/2 cup sugar, mixing until thick. Combine flour, baking powder and salt.Sift Fold slowly into the egg mixture before folding in the vanilla.

Line a pan with wax paper, grease with butter or lard, and sprinkle granualted sugar. Pour into pan and bake at 350 for 20 minutes.

Cover tea towel with confectioner's sugar before turning out cake onto towel. Roll up wile hot. Cool slightly, then unroll and remove from towel. Unroll the cake, spread jam and whipped cream, then re-roll and slice.
