Today's recipe might be one of the most traditional Finnish dishes you'll ever have - Pea Soup!
- 2 Cups Dried Green Peas
- 12 Cups Water
- 3 Tbsp Butter
- 1 Tbsp Flour
- 1/2 Tsp Mustard
- 1 Cup Cream
Wash peas and soak in the water overnight.
Once ready to cook, boil and cook until tender.
Using a hand mixer or blender, puree water and peas until smooth.
In a small saucepan, melt the butter and stir in the flour.
Add flour/butter mixture to pea puree and stir thoroughly.
Cook over medium heat stirring constantly for 10 minutes.
Add mustard, salt and pepper to taste.
Whip the cream and add in just before serving.
